apple cranberry bread

this bread can be made in almost any baking dish that will fit my favorite is a small loaf pan 8 by 4 inches/20 by 10cm but you can even use a slow cooker yes a slow cooker

                                                                Recipe
1 cup all purpose flour unbleached if possible
1 cup whole wheat flour
1/4 cup milled flaxseeds
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
3/4 cup demerara or evaporated cane juice sugar
1/4 cup olive oil
1 egg
2 tbsp finely grated orange zest from 2 oranges
3/4 cup orange juice
1 tsp vanilla
1 cup finely chopped peeled cored apple
1 cup fresh or frozen cranberries


1) in a bowl or on a sheet of wax paper combine the all purpose flour the whole wheat flour flaxseeds baking powder salt and cinnamon

2) In a seprate bowl beat sugar  oil egg orange zest and juice and vanilla until thoroughly blended add dry ingredients stiring just until blended fold in apple and cranberries.

3) Spoon batter into prepared pan cover tightly with foil and secure with string place in small loaf pan or slow cooker and poor in enough boiling water to come 1 inch up the sides of the dish if in slow cooker cover and cook on high for 4 hours in oven bake till golden brown cool and serve
